Ingredients (serves 8)

Stock:

  • Leftover turkey carcass (with skin and bones)
  • 1 onion, halved (skin on)
  • 2 carrots, chunked
  • 2 celery stalks, chunked
  • 6 garlic cloves, smashed
  • 2 bay leaves
  • 1 tbsp peppercorns
  • Fresh thyme sprigs
  • Cold water to cover

Soup additions:

  • 2 cups leftover shredded turkey meat
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup small pasta or rice
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh parsley to garnish

Method

Stock (do day-of or night before):

  1. Place carcass in large stockpot
  2. Add vegetables and aromatics
  3. Cover with cold water
  4. Bring to bare simmer (don't boil)
  5. Simmer uncovered 4-6 hours
  6. Strain through fine sieve
  7. Refrigerate or use immediately

Soup: 8. Heat 2 tbsp oil in pot 9. Sauté diced onion, carrots, celery 5 minutes 10. Add 8 cups stock 11. Bring to simmer 12. Add pasta/rice; cook per package directions 13. Stir in turkey meat last 5 minutes 14. Add frozen peas last 2 minutes 15. Season with salt and pepper 16. Garnish with parsley
