Ingredients (serves 6)

  • 1 oz dried porcini mushrooms (soaked, reserve liquid)
  • 1 lb mixed fresh mushrooms (cremini, shiitake, oyster), sliced
  • 6 cups warm chicken or vegetable broth
  • 2 cups Arborio or Carnaroli rice
  • 1 cup dry white wine
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 4 tbsp butter, divided
  • 1 cup grated Parmigiano-Reggiano
  • 2 tbsp olive oil
  • 1/4 cup chopped parsley
  • Salt and pepper
  • Truffle oil (optional finishing)

Method

Prep mushrooms:

  1. Soak dried porcini in hot water 30 minutes
  2. Drain, reserve liquid (strain for risotto)
  3. Chop soaked porcini
  4. Slice fresh mushrooms

Cook mushrooms: 5. Heat olive oil in large skillet 6. Add fresh mushrooms in batches (don't crowd) 7. Cook until water released, then golden (10-12 minutes) 8. Add chopped porcini and garlic 9. Cook 2 minutes 10. Set aside, keep warm

Build risotto: 11. In large pot, melt 2 tbsp butter 12. Sauté onion 5 minutes 13. Add Arborio rice, stir 2 minutes (toasting) 14. Pour in wine, stir until absorbed

The slow addition: 15. Add 1 cup hot broth, stir until absorbed 16. Continue adding 1/2 cup at a time 17. Stir constantly! 18. Wait until liquid absorbed before adding more 19. Use porcini liquid first (strained) 20. About 20-25 minutes total

Finish: 21. When rice is creamy but al dente, stop adding broth 22. Stir in cooked mushrooms 23. Add remaining 2 tbsp butter 24. Stir in Parmigiano 25. Add parsley 26. Season with salt and pepper

Plate: 27. Plate immediately (don't sit) 28. Drizzle truffle oil if using 29. Extra Parmigiano on top 30. Garnish with parsley
