Ingredients (serves 8)
- 3 lbs beef chuck, cubed
- 1/4 cup flour
- Salt and pepper
- 3 tbsp oil
- 2 large onions, chopped
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 1 cup dry red wine
- 4 cups beef broth
- 2 bay leaves
- 4 sprigs fresh thyme
- 4 carrots, chunked
- 4 potatoes, cubed
- 1 cup pearl onions (frozen OK)
- 1 cup frozen peas (add at end)
- 2 tbsp Worcestershire
- Fresh parsley for garnish
Method
Sear beef:
- Pat beef dry, season with salt and pepper
- Dredge in flour
- Heat oil in heavy pot
- Brown beef in batches (don't crowd!)
- Transfer to plate
Build flavor: 6. In same pot, sauté onions 5 minutes 7. Add garlic, cook 1 minute 8. Stir in tomato paste, cook 2 minutes 9. Pour in wine, scrape browned bits (deglaze!) 10. Cook 2 minutes (alcohol off)
Simmer: 11. Return beef to pot 12. Add broth, bay leaves, thyme 13. Bring to simmer 14. Cover, cook 1.5 hours
Add vegetables: 15. Add carrots, potatoes, pearl onions 16. Continue 30-45 minutes (beef tender, vegetables done)
Finish: 17. Stir in Worcestershire 18. Add peas last 5 minutes 19. Season with salt and pepper 20. Garnish with parsley
