- 1 tbsp smoked paprika
- 1 tsp oregano
- 1 tbsp cocoa powder (secret depth)
- 2 28-oz cans crushed tomatoes
- 2 cans black beans, drained
- 2 cans kidney beans, drained
- 1 can chipotle in adobo, minced (optional, smoky heat)
- 2 cups beef broth
- 2 tbsp brown sugar
- 2 tbsp Worcestershire
- Salt and pepper
Method
Build flavor:
- Heat 2 tbsp oil in large pot
- Brown ground beef, breaking up
- Drain excess fat
- Add onions, bell peppers, cook 5 minutes
- Add garlic, jalapeño, cook 1 minute
- Stir in spices, cook 30 seconds (bloom)
- Add cocoa, stir
Simmer: 8. Add tomatoes, beans, chipotle if using 9. Pour in broth 10. Stir in brown sugar, Worcestershire 11. Bring to simmer 12. Cook covered 1 hour 13. Cook uncovered 30 minutes (thickens) 14. Season with salt and pepper
