Ingredients (serves 10-12)
Meat sauce:
- 1 lb ground beef
- 1 lb Italian sausage (mild or hot)
- 1 large onion, diced
- 6 garlic cloves, minced
- 2 28 oz cans crushed tomatoes
- 1 6 oz can tomato paste
- 1/2 cup red wine
- 2 tbsp Italian seasoning
- 2 tbsp fresh basil, chopped
- 1 tsp red pepper flakes
- Salt and pepper
Ricotta filling:
- 32 oz whole-milk ricotta
- 2 large eggs
- 1/2 cup grated Parmigiano
- 1/2 cup chopped parsley
- 1 tsp salt
- 1/2 tsp pepper
Layers:
- 1 lb lasagna noodles (no-boil or regular)
- 3 cups shredded mozzarella
- 1 cup grated Parmigiano
Method
Meat sauce:
- In large pot, brown beef and sausage
- Drain excess fat
- Add onion, cook 5 minutes
- Add garlic, cook 1 minute
- Stir in tomato paste, cook 2 minutes
- Add tomatoes, wine, herbs, seasoning
- Simmer 30 minutes (longer better)
- Season with salt and pepper
Ricotta filling: 9. Mix all ricotta filling ingredients 10. Set aside
Cook noodles (if not no-boil): 11. Boil per package 12. Drain, separate sheets 13. Or use no-boil (saves time)
Assemble: 14. Spread thin layer sauce on bottom of 9x13 pan 15. Layer noodles (overlap slightly) 16. Spread ricotta mixture 17. Sprinkle mozzarella 18. Add sauce layer 19. Repeat layers (3-4 layers total) 20. Top with sauce, mozzarella, Parmigiano
Bake: 21. Cover with foil 22. Bake 375°F for 45 minutes 23. Remove foil, bake 15-20 more 24. Until bubbling and golden top 25. Rest 15 minutes before cutting
