The classic recipe (9x13 pan)
Shortbread base
- 2 cups flour
- 1/2 cup powdered sugar
- 1 cup butter (cold; diced)
Filling
- 4 large eggs
- 2 cups sugar
- 1/3 cup flour
- 1/2 cup fresh lemon juice
- 2 tablespoons lemon zest
Topping
- Powdered sugar (for dusting)
Method
- Preheat oven to 350°F
- Mix flour + powdered sugar; cut in butter
- Press into 9x13 pan
- Bake 20 minutes (until lightly golden)
- Whisk eggs + sugar + flour + lemon juice + zest
- Pour over hot crust
- Bake 20-25 more minutes (filling set)
- Cool completely
- Refrigerate 2 hours
- Cut; dust with powdered sugar
