  • 1 lb ground beef
  • 2 large onions, diced

  • 2 28 oz cans crushed tomatoes
  • 1 6 oz can tomato paste
  • 1/2 cup red wine
  • 2 tbsp Italian seasoning
  • 2 tbsp fresh basil
  • 1 tsp red pepper flakes
  • Salt and pepper

Pasta:

  • 1 lb ziti (or penne or rigatoni)
  • Salt for water

Cheese mixture:

  • 32 oz whole-milk ricotta
  • 1 large egg
  • 1/2 cup grated Parmigiano
  • 1/4 cup parsley, chopped

Layers:

  • 4 cups shredded mozzarella
  • 1/2 cup grated Parmigiano

Method

Sauce:

  1. Brown sausage and beef
  2. Drain excess fat
  3. Add onions, cook 5 minutes
  4. Add garlic, cook 1 minute
  5. Stir in tomato paste, cook 2 minutes
  6. Add tomatoes, wine, herbs
  7. Simmer 30 minutes (longer better)
  8. Season

Pasta: 9. Boil ziti to al dente (1 minute less than package) 10. Drain (don't rinse) 11. Toss with a little sauce (prevents sticking)

Cheese mixture: 12. Combine ricotta, egg, Parmigiano, parsley 13. Mix well

Assembly: 14. Spread thin sauce on bottom of 9x13 pan 15. Add half the ziti 16. Dollop half the ricotta mixture 17. Spread some sauce 18. Sprinkle mozzarella 19. Repeat layers 20. Top with sauce, mozzarella, Parmigiano

Bake: 21. Cover with foil 22. Bake 375°F for 30 minutes 23. Remove foil, bake 15-20 more 24. Until bubbling, golden top 25. Rest 15 minutes before serving
