The classic recipe (serves 6-8)
Ingredients
- 1 cup arborio or short-grain rice
- 4 cups whole milk
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- Pinch of salt
- 2 cups heavy cream
- 1/2 cup raisins (optional)
Method
- Combine rice + milk + sugar + cinnamon + salt in pot
- Bring to gentle simmer (don't boil)
- Cook 35-45 minutes; stir often
- Add vanilla
- Stir in cream
- Add raisins if using
- Cool slightly; serve warm or cold
Variations
Danish risalamande (Christmas Eve)
- Add whipped cream after cooling
