The classic recipe (makes 1 pie)
Crust (double crust)
- 2 1/2 cups flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 cup cold butter (diced)
- 8-12 tablespoons ice water
Filling
- 6 large apples (mix of varieties — Granny Smith + Honeycrisp + Braeburn)
- 3/4 cup sugar
- 2 tablespoons flour
- 1 tablespoon cornstarch
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon allspice
- Pinch of salt
- 2 tablespoons lemon juice
- 1 tablespoon butter (dotted on top)
Method
- Make crust: process flour + sugar + salt + butter; add water; chill 1 hour
- Roll out half for bottom; place in 9-inch pie pan
- Peel, core, and slice apples thinly
- Mix apples + sugar + flour + cornstarch + spices + lemon juice
- Pile into bottom crust; dot with butter
- Roll out top crust; place over apples
- Crimp edges; cut vents
- Brush with egg wash; sprinkle sugar
- Bake at 425°F for 25 minutes
- Reduce to 375°F; bake 30-40 more minutes
- Cool 2 hours before slicing
