Turkey hash is Boxing Day breakfast magic — crispy potatoes, shredded leftover turkey, topped with fried egg. Christmas leftovers reborn as comfort breakfast.

The recipe

Ingredients (serves 4)

  • 2 lbs leftover roasted potatoes (or 1.5 lbs raw, cubed)
  • 3 cups leftover turkey, shredded
  • 1 large onion, diced
  • 2 bell peppers, diced (one red, one green for color)
  • 4 tbsp butter or duck fat (or oil)
  • 4 garlic cloves, minced
  • 2 tsp fresh thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 eggs (one per serving)
  • Fresh chives or parsley for garnish

Method

Crispy hash:

  1. If using raw potatoes, parboil 5 minutes, drain well
  2. Heat butter in large cast-iron skillet
  3. Add potatoes (single layer if possible)
  4. Cook UNDISTURBED 5-7 minutes (let crust form)
  5. Flip, cook another 5-7 minutes
  6. Push to side
  7. Add onions and peppers, cook 5 minutes
  8. Add garlic, cook 1 minute
  9. Stir in shredded turkey, thyme, paprika
  10. Mix everything together, cook 3-5 more minutes
  11. Season with salt and pepper

Fried eggs: 12. In separate pan, fry eggs to your preference 13. Sunny-side up traditional 14. Over-easy modern 15. Save the runny yolk for sauce

Plate: 16. Pile hash on plate 17. Top with fried egg 18. Garnish with chives 19. Hot sauce on side optional

Tips for success

Don't crowd the pan

  • Single layer for crisping
  • Or cook in batches
  • Steam = soggy
  • Space = crispy

Cast iron ideal

  • Better browning
  • Even heat
  • Crisp results
  • Worth investment

Don't flip too early

  • 5+ minutes undisturbed
  • Trust the crust forming
  • Flip when golden

Hot pan matters

  • Medium-high heat
  • Allow proper preheating
  • Sizzle when ingredients added

Make ahead

Prep work

  • Pre-shred turkey
  • Pre-cube vegetables
  • 5 minute prep day-of

Day-old potatoes

  • Best for hash
  • Already roasted/cooled
  • Crisp better than fresh

Hash mixture

  • Make full hash
  • Refrigerate
  • Reheat with egg fresh

Storage

Refrigerator

  • 3 days
  • Reheats well
  • Best with fresh egg on top

Don't freeze

  • Texture suffers
  • Make fresh each time
  • Easy enough
