Method

- Slice potatoes into 1/8-inch rounds
- Slice onion into thin half-rounds (if using)
- Salt generously
- Let sit 10 minutes
Cook potatoes and onion: 5. Heat olive oil in non-stick 10-inch skillet 6. Carefully add potatoes and onion to oil 7. Cook over medium-low heat, gently stirring occasionally 8. Don't brown — soften, cook through, 20-25 minutes 9. Drain potatoes in colander (reserve oil for other uses) 10. Discard most of the oil (keep 2 tbsp in pan)
Mix and cook: 11. Beat eggs in large bowl 12. Add hot potato mixture to eggs 13. Stir gently, season with salt 14. Let sit 10 minutes (potato absorbs egg)
First side: 15. Return pan to medium-high heat with reserved oil 16. Pour egg-potato mixture in 17. Spread evenly 18. Cook 5-7 minutes (bottom set)
Flip (the tricky part): 19. Place a plate larger than pan on top 20. Invert pan onto plate (tortilla on plate) 21. Slide tortilla back into pan (raw side down) 22. Cook another 5-7 minutes 23. Sides should be golden
Rest: 24. Slide onto serving plate 25. Rest 10 minutes minimum 26. Slice into wedges
