Updated May 21, 2026

Eggs Benedict is elegant Christmas brunch — poached eggs on Canadian bacon and English muffin, smothered in hollandaise. Restaurant-quality at home.

The recipe

Ingredients (serves 4)

Poached eggs:

  • 8 large eggs (very fresh!)
  • 1 tbsp white vinegar
  • 1 tbsp salt
  • Water for poaching

Hollandaise sauce:

  • 3 large egg yolks
  • 1 tbsp lemon juice
  • 1/2 cup butter, melted
  • Salt and pepper
  • Pinch cayenne (optional)

Assembly:

  • 4 English muffins, split and toasted
  • 8 slices Canadian bacon (or ham), warmed
  • Fresh chives or parsley for garnish

Method

Hollandaise sauce (blender method - easy):

  1. Place yolks in blender with lemon juice
  2. Blend on high
  3. Slowly drizzle melted butter while blending
  4. Should emulsify thick
  5. Add salt, pepper, cayenne
  6. Keep warm (don't let cool/break)

Or traditional (more skill):

  1. Whisk yolks and lemon over double boiler
  2. Slowly add melted butter while whisking
  3. Don't break (low heat!)
  4. More controlled but harder
  5. Restaurant technique

Poach eggs: 6. Bring water to simmer (not boil) 7. Add vinegar and salt 8. Create gentle whirlpool 9. Crack egg into whirlpool 10. Cook 3 minutes (runny yolk) 11. Remove with slotted spoon 12. Drain briefly 13. Repeat for each egg

Or use poach pods:

  • Silicone egg poachers
  • Place in simmering water
  • Easier but slightly different texture
  • Reliable

Warm Canadian bacon: 14. Pan-fry briefly or warm in skillet 15. Don't crisp too much 16. Heated through

Toast English muffins: 17. Split and toast 18. Light butter on each

Assemble: 19. Place toasted muffin halves on plate (2 per serving) 20. Top each with Canadian bacon 21. Top with poached egg 22. Drizzle hollandaise generously 23. Sprinkle chives 24. Cracked pepper
