Method

  1. Beat egg yolks until thick and pale
  2. Slowly add powdered sugar
  3. Beat until ribbon stage
  4. Add spices, vanilla, rum if using

Whip whites separately: 5. Beat egg whites with cream of tartar 6. Whip to stiff peaks 7. Salt added

Combine: 8. Fold whites into yolk mixture 9. Gently, maintain volume 10. Store in jar, refrigerate 11. Lasts 1 week
