Ingredients (serves 8)
Shrimp:
- 2 lbs large shrimp (16-20 count), peeled and deveined, tails on
- Court bouillon for poaching:
- 8 cups water
- 1 lemon, halved
- 1 onion, quartered
- 2 bay leaves
- 1 tbsp peppercorns
- 2 tbsp salt
- 1 cup white wine
- Fresh dill or parsley stems
Classic cocktail sauce:
- 1 cup ketchup
- 3 tbsp prepared horseradish (or to taste)
- 2 tbsp lemon juice
- 1 tbsp Worcestershire
- 1 tsp hot sauce (Tabasco)
- Salt and pepper to taste
Or chef-grade sauce:
- All above ingredients
- Plus 1 tbsp finely grated horseradish (fresh!)
- 1 tsp celery seed
- Brighter, complex
Method
Cook shrimp:
- Bring court bouillon to boil
- Reduce to simmer
- Add shrimp
- Cook 2-3 minutes until pink and opaque
- Don't overcook (rubbery!)
- Drain immediately
- Plunge into ice bath
- Drain, refrigerate
Make sauce: 9. Combine all sauce ingredients 10. Stir well 11. Taste and adjust (more horseradish, lemon, etc.) 12. Refrigerate 30 minutes (flavors meld)
Plate: 13. Arrange shrimp around martini glasses or platter 14. Tails draped over edge (classic presentation) 15. Lemon wedges 16. Sauce in center (for dipping) 17. Garnish with fresh parsley or dill 18. Serve cold
