The recipe
Ingredients (makes 8 crab cakes)
- 1 lb lump crabmeat (Maryland blue crab ideal)
- 1/3 cup panko breadcrumbs (less than typical = more crab)
- 1 large egg
- 1/4 cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp Old Bay seasoning
- 1 tbsp Worcestershire sauce
- 2 tsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp parsley, chopped
- 1/4 cup canola oil (for frying)
- 2 tbsp butter
Method
Mix gently:
- Pick through crabmeat (remove any shell)
- Place crabmeat in bowl
Make binder: 3. In separate bowl, whisk egg, mayo, Dijon, Old Bay, Worcestershire, lemon, salt, pepper 4. Mix well
Combine: 5. Pour binder over crab 6. Sprinkle panko 7. Add parsley 8. Mix VERY GENTLY (preserve lumps) 9. Don't overmix or break up
Form: 10. Divide into 8 equal portions 11. Gently form into round cakes 12. About 3 inches across, 1 inch thick 13. Place on parchment-lined baking sheet 14. Refrigerate 30 minutes (firms up)
Cook: 15. Heat oil and butter in heavy skillet 16. Medium-high heat 17. Carefully place 4 crab cakes (don't crowd) 18. Cook 4 minutes per side (golden brown) 19. Don't move them while cooking (sets the crust) 20. Internal temp 145°F when done
Serve: 21. Drain briefly on paper towel 22. Plate with lemon wedge 23. Tartar sauce, remoulade, or aioli 24. Salad greens alongside
