Method (butter-poached)
Prep tails:
- Thaw frozen tails if frozen (cold water 30 minutes)
- With kitchen shears, cut through top shell down to base
- Don't cut the bottom
- Pull meat up gently
- Place meat on top of shell
Compound butter: 6. Mix melted butter, garlic, lemon, paprika 7. Brush onto exposed meat 8. Salt and pepper
Cook (broiler method): 9. Place tails on baking sheet 10. Position 6 inches under broiler 11. Broil 10-12 minutes 12. Meat should be opaque white 13. Internal temp 140°F 14. Carryover to 145°F
