Kringle is the iconic Danish Christmas pastry — laminated dough with almond filling, traditionally pretzel-shaped, glazed with icing.
The recipe
Ingredients (makes 1 large kringle)
Dough:
- 2 1/2 cups flour
- 1 tsp salt
- 1 cup cold butter, cubed
- 1/2 cup ice water
- 1 tbsp vinegar
Almond filling:
- 1 cup almond paste
- 1/2 cup sugar
- 1 egg white
Glaze:
- 1 cup powdered sugar
- 2-3 tbsp milk
- 1/2 tsp almond extract
- Sliced almonds for garnish
Method
Dough (do night before):
- Whisk flour and salt
- Cut in cold butter until pea-sized
- Mix water and vinegar
- Slowly add to flour mixture
- Mix just until comes together
- Wrap and refrigerate overnight (or 2 hours)
Filling: 7. Beat almond paste, sugar, egg white 8. Should be spreadable 9. Refrigerate until cold
Assembly: 10. Roll dough to 6x18 inch rectangle 11. Spread filling down center 1/3 12. Fold left third over filling 13. Fold right third over (envelope-like) 14. Pinch ends to seal 15. Shape into pretzel or oval shape 16. Place on parchment-lined baking sheet 17. Refrigerate 30 minutes
Bake: 18. Bake 400°F for 25-30 minutes (golden brown) 19. Cool completely
Glaze: 20. Mix powdered sugar, milk, almond extract 21. Drizzle over cooled kringle 22. Sprinkle sliced almonds 23. Let set before slicing
