The recipe
Ingredients (per drink)
- 1 1/2 oz Irish whiskey (Jameson, Bushmills classic)
- 1 tsp brown sugar (or cane sugar)
- 4 oz strong hot coffee
- Heavy cream (whipped to soft peaks)
Method
Prep cream:
- Whip cream to SOFT peaks (just until thickened, still pourable)
- Don't over-whip
- Should pour from spoon slowly
Make drink: 4. Warm Irish coffee glass with hot water (then pour out) 5. Add sugar to glass 6. Pour in whiskey 7. Top with hot coffee 8. Stir to dissolve sugar
Float cream: 9. Pour cream over back of spoon 10. Cream floats on top 11. Don't stir (the magic is layering) 12. Drink hot through cool cream
