Method

  3. Drain; reserve 1/4 cup cooking water
  4. In a large skillet, melt butter over medium
  5. Add honey + Dijon; whisk smooth
  6. Add carrots; toss to coat
  7. Add reserved water + thyme + salt + pepper
  8. Simmer 3-5 minutes until glaze thickens
  9. Finish with vinegar (brightens)
  10. Garnish with parsley
