Dough:

- 1/2 cup sugar
- 4 large eggs
- 2 tbsp butter, softened
- 2 tbsp anise liqueur or vanilla
- Zest of 1 lemon
- Zest of 1 orange
- Pinch of salt
- Oil for frying
Coating:
- 2 cups honey
- 1/2 cup sugar
- 1/4 cup orange juice
- Zest of 1 orange
- 1/2 cup chopped walnuts (optional)
- Decorative sprinkles (rainbow, colored sugar, candied fruit)
Method
Dough:
- Combine flour, sugar, salt in bowl
- Make well, add eggs, butter, liqueur, citrus zests
- Mix to form dough
- Knead 5-7 minutes until smooth
- Rest 30 minutes
Shape: 6. Roll dough into ropes (1/2 inch thick) 7. Cut into 1/2-inch pieces 8. Roll each into small balls 9. Lay out on parchment 10. Heat oil to 350°F
Fry: 11. Fry balls in batches 12. Don't crowd 13. 3-4 minutes until golden brown 14. Drain on paper towels 15. Cool slightly
Coat: 16. Heat honey, sugar, orange juice in large saucepan 17. Add orange zest 18. Bring to simmer (don't boil) 19. Add fried balls 20. Stir gently to coat 21. Add walnuts if using
Assemble (the showstopper): 22. Pile coated balls in pyramid on plate 23. Form Christmas tree shape 24. Or wreath ring 25. Sprinkle decorative sprinkles 26. Add candied fruit pieces 27. Drizzle remaining honey if desired
