The recipe

Ingredients (makes 2 loaves)

  • 1 cup whole milk, warm
  • 1 packet active dry yeast
  • 1/2 cup sugar
  • 1/2 cup butter, melted
  • 1 large egg
  • 1 tsp salt
  • 2 tsp ground cardamom (essential!)
  • 4-5 cups flour
  • 1 cup raisins
  • 1/2 cup candied citron (or mixed peel)

Method

  1. Activate yeast in warm milk with pinch of sugar
  2. Mix sugar, melted butter, egg, salt, cardamom
  3. Add yeast mixture
  4. Gradually add flour to form soft dough
  5. Knead in raisins and citron
  6. Knead 8-10 minutes (smooth, elastic)
  7. Let rise 90 minutes (doubled)
  8. Punch down, divide in half
  9. Shape into round loaves
  10. Place on parchment-lined baking sheet
  11. Let rise 45 minutes
  12. Brush with egg wash
  13. Bake 375°F for 30-35 minutes (golden brown)
  14. Cool on wire rack
