The recipe
Ingredients (makes 2 loaves)
- 1 cup whole milk, warm
- 1 packet active dry yeast
- 1/2 cup sugar
- 1/2 cup butter, melted
- 1 large egg
- 1 tsp salt
- 2 tsp ground cardamom (essential!)
- 4-5 cups flour
- 1 cup raisins
- 1/2 cup candied citron (or mixed peel)
Method
- Activate yeast in warm milk with pinch of sugar
- Mix sugar, melted butter, egg, salt, cardamom
- Add yeast mixture
- Gradually add flour to form soft dough
- Knead in raisins and citron
- Knead 8-10 minutes (smooth, elastic)
- Let rise 90 minutes (doubled)
- Punch down, divide in half
- Shape into round loaves
- Place on parchment-lined baking sheet
- Let rise 45 minutes
- Brush with egg wash
- Bake 375°F for 30-35 minutes (golden brown)
- Cool on wire rack
