- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cayenne (subtle warmth)
- 2 tbsp maple syrup (optional)
- Salt and pepper to taste
- Fresh sage for garnish
- Optional: pumpkin seeds, crème fraîche, brown butter drizzle
Method
Squash prep:
- Cut squash in half lengthwise
- Scoop out seeds
- Brush with oil
- Roast cut-side down 425°F for 45-60 minutes (tender)
- Cool slightly, scoop flesh
Soup base: 6. Melt butter in large pot 7. Add onion, cook 5 minutes 8. Add carrots, cook 5 minutes 9. Add garlic, cook 1 minute 10. Add squash flesh 11. Pour in stock 12. Add spices (except maple syrup if using) 13. Simmer 20 minutes
