The recipe
Ingredients (makes 24)
- 2 cups flour
- 1 cup sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 3 large eggs
- 1 tsp vanilla
- 1 tsp almond extract
- 1 cup whole almonds (or pistachios, or hazelnuts)
- 1/2 cup dried cranberries (optional, Christmas-festive)
Method
First bake:
- Whisk dry ingredients
- Beat eggs with extracts
- Mix wet into dry
- Fold in nuts and cranberries
- Form 2 logs on parchment, 12 inches long, 3 inches wide
- Bake 350°F for 25-30 minutes (firm, golden)
- Cool 15 minutes
Second bake: 8. Slice diagonally into 1/2-inch pieces 9. Lay cut-side up on baking sheet 10. Bake 325°F for 8 minutes per side 11. Cool completely (will crisp)
